Escape to Magnificent Morocco This Winter

To get all budding cooks in the mood for Morocco, Head Chef, Dan Inniss-Fitzhugh has shared some of his favourite recipes bringing the magic of Kasbah Tamadot to your kitchen.

Harira Soup

You'll need:

    150g onion
    75g lentils
    75g rice
    ½  bunch of parsley (chopped)
    100g celery
    ½  bunch of coriander (chopped)
    1.5 litre of water
    3 fresh tomatoes (with the seeds removed)
    75g chick peas
    1 Tablespoon of tomato paste
    30g flour
    1 Tsp. cinnamon
    ½ Tsp. black pepper (powder)
    2 Tsp. salt

Make it:

    Sweat-off the chopped onions, chopped celery and chopped tomatoes in roughly 20g of olive oil for about 5mins
    Add the lentils and the chick peas and tomato paste cook for 5minutes
    Add the water and cook for 30 minutes
    After 30 minutes add the rice, then cook for 15 minutes until all the dry ingredients are nice and soft
    Next mix the flour with a little water to make a wet paste, then add to the soup.
    Bring to boil
    Add the chopped parsley and coriander and serve
